Tortellini TriColore with Sausage and Pepper

Ingredients
- 4lb Tricolor tortellini
- 2 1/2lb Mild (or Spicy) Italian Sausage (sliced in 1” coins)
- 1 medium Green Bell Pepper (sliced)
- 1 medium Red Bell Pepper (sliced)
- 1 medium Yellow Onion (sliced)
- 2 tablespoons garlic (chopped)
- 1 usa dry quart Diced Stewed Tomatoes
Directions
Step 1

Sauté the sausage, onion, and peppers until the vegetables are soft and the sausage is parcooked. Add the garlic and cook 1 minute before adding the tomatoes. Bring to a boil then reduce to a simmer for 15 minutes. |
Step 2

Cook the tortellini until they are al dente. Toss with sauce. Top with grated parmesan cheese if desired. |
